Well, I ran a search and did not come across any threads that looked similar to this one. And out of boredom, I decided to compose a NEW list of anime that people should probably see. I will, of course, not be including ones that everyone in the world already probably knows about and has already seen (i.e. Gundams, Cowboy Bebop, Trigun, etc. Pretty much mainstream). I'll probably be updating this as I go along.

Action/Sci-Fi/Mecha
Code Geass - Yeah, this will probably be the ONLY mainstream anime I mention simply because I've seen some people that haven't heard of it. It's pretty damn good as mecha/sci-fi stories go.
Darker Than Black - Pretty well animated fight scenes, dark story line. Pretty graphic, so it feels more adult. Plus it probably has one of my favorite OPs of any anime to date.
Gurren Lagan - About the world after humans had been forced under the surface by Beastmen. It's got pretty outrageous action and seems to be a borderline comedy, but seemed to fit in with mecha better. Sniper-rifle-wielding-big-breasted-girl-fan-service is always great too.
Soul Eater - Well, it might be main stream. I dunno, but I haven't met too many people that can snap their fingers and say, "Oh yeah!" If you like shinigami and interesting art style, check this one out.
Comedy/Romance/Ecchi
Kanokon - Fairly straight-forward as Ecchi anime comes. But this one seemed particularly better than some that I've seen lately. Loaded with fan-service and those of you that like anthropomorphic animal deities will probably enjoy this. And this actually had me laughing quite a bit without any language barriers or odd Japanese puns.
Karin - I know some of you have seen this but I've throwing it in the list for the sake of those who have not. About a vampire girl who actually produces TOO much blood. It's quite amusing to be honest and who doesn't love a little vampire fan-service, eh?
The Melancholy of Haruhi Suzumiya - This one's pretty popular so if you've already heard of it forgive me. This could very well honestly fit in with the Sci-Fi section too, but it seems to focus on the other three genres listed above. Good amount of fan-service, has some romantic aspects and it had my sides busting pretty much every episode. The chronological order is kinda weird so if you DO watch it, I suggest you look that up first.
Tona-gura! - Pretty amusing anime about a guy that comes back to live in his old house next to a girl that has idealistic views about what he'd be like - turns out he's just another ecchi-san.
Zero No Tsukaima - They're on their third season now and I have a place in my heart for this one. About a world full of magic (Harry Potter-esque) in which a girl that has a 0% cast proficiency calls forth a modern Japanese boy to her world as her familiar.
Mystery/Suspense/Drama
Higurashi No Naku Koro Ni - Man. After the first three-four episodes of this, my mind was already blown. This is quite a time investment, but it pays off quite well, I feel. There is a second season as well, so in total I believe there's about 50 episodes. I can't really figure out how to describe this one, so... For the love of all that's sacred, unholy, whatever, watch this one! (Star pick)
School Days - Begins innocently, like any high school romance anime. Then things quickly get out of hand and spiral into how dark and demented a human being can become. Definitely not for the faint of heart of weak of stomach. It had mine roiling after the last episode. Very disturbing and worth the measly twelve episode sit-through.
Jigoku Shojou Futakomori - A little bit older I think and there is already a second season (and perhaps a live action movie...?). Regardless, this one was a classic that I don't believe too many people know about. If you truly wish the most undeniable vengeance upon someone, you can visit a site that will summon a girl by the name of Enma Ai, who will give you the offer of whisking that person immediately to Hell. The only problem is, you must also sacrifice your after-life to an eternity of torment if you accept. Pretty interesting stuff, but sometimes it can feel a little stale. Still worth it though.
